Decades later, their son Tony Zafirakos encouraged them to turn this passion into a formal venture. By 2016, Aristotelis ke Anthoula was officially born in Bowral, fueled by Tony’s dedication to learning natural winemaking in Europe.
Tony’s partner, Maddison, joined in 2020, propelling the winery forward. Now based on the stunning Far South Coast of NSW, theyve remained true to their lo-fi approach, ensuring each bottle captures their Greek heritage and coastal Australian upbringing.
The 2023 Aristotelis ke Anthoula Retsini pays homage to traditional Greek Retsina. This unique wine blends skin-contact Chardonnay and Zibibbo with Aleppo pine resin during fermentation. The result is a perfect balance of fresh fruit, bright acidity, and a subtle piney lift. Crisp and grippy, this orange wine beautifully marries tradition and innovation.
