Working from a corner of his brother Ewald’s cellar, he tends small parcels across several sites, crafting only white wines from Sauvignon, Chardonnay and two Muskatellers – some pressed, some skin-contact, all aged for extended periods in barrel. Farming is biodynamic, with the vitality of soil and ecosystem at the heart of everything; his vineyards are alive with flowers and insects, harvested entirely by hand with selection beginning among the vines to keep yields naturally low.
