A distinctive, easy-to-like traditional method sparkling wine from Pamela Geddes with bready, pastry-like nose gives way to fresh green apple and lemon. On the palate, citrus and warm cinnamon spice are balanced by bright acidity and a long finish. As Pamela puts it ‘this is a wine to be enjoyed, not too pontificated over!’
Vinified in the traditional method, this wine unusually underwent a third fermentation in bottle after re-inoculation with yeast, resulting in a deliciously creamy sparkler. No liqueur d’expdition was added, keeping sulphur levels low and residual sugar between 24 g/l technically an Extra Brut. Twenty months on the lees adds savoury complexity and a silky texture.
Pamela sources her base wine from a cooperative in Peneds, running one of Spain’s most boutique operations. Her facility measures just 99.9 square metres as she proudly notes, ‘the smallest LEGAL sparkling wine facility in Spain!’
