Pure, light and lively, with fine bubbles and citrusy aromas of grapefruit, orange peel, as well as peach, quince, and a slight honeyed note. The palate is fresh and dry, with minerals from the calcareous nature of its terroir.
Grapes for this one are grown on the white albariza soils, characteristic of the Marco de Jerez region, full of chalky clay, marine fossils, and limestone.
Manual harvest in mid-August is followed by fermentation in steel tanks. A second fermentation takes place in the bottle, following the traditional method, resulting in a 20-month aging period. This is a Brut Nature wine, with no added sugar, notable for its purity and dry style.
