ORGANIC(NON-CERTIFIED)

A delightfully untamed and unpolished red from the far northwest of Spain which is a joy to drink. An inky-purple in colour. Aromas of cassis, raspberry, and smoke. On the palate, full-bodied and generous with bags of earthy red fruits. Rich and chewy in texture, the finish is lingering.

Gregory Perez came to Bierzo from his native Bordeaux in 2001 to work as an enologist for a large winery. By 2007, Gregory had begun to reject the new winemaking methods, and set out to produce Bierzo wines that express the Bierzo terroir. He works only with native grapes, farming them as organically as possible, and working with natural winemaking methods, such as fermenting all of his wines with wild yeasts and working with very little sulfur during the winemaking process.
