Stimatum, meaning esteemed, is Ameztois limited red txakoli. Made from local, indigenous grapes that grow on the slopes rising above Getaria, an ancient Basque fishing village on Spains rugged northern coast. In the 2000s, when almost all of the other local wineries gave up on this variety, the Ameztoi family retained their old vines, dating all the way back to 1840. The traditional style of Stimatum is true to the origins of the Getariako regions winemaking tradition, a low-alcohol wine with a luminous, refreshing frame and the signature spritz of natural, residual CO2.

Think violets, strawberry, redcurrants and red cherry, a light body and low tannins. A good one to chill slightly!

Ignacio Ameztoi constitutes the seventh generation to carry on the tradition of making Txakolina. The organic Bodegas Ameztoi is situated in the fishing village of Getaria, deep in the heart of the Basque country of northern Spain, overlooking the Bay of Biscay. The Ameztoi family grows the indigenous Hondarrabi Zuri and Hondurrabi Beltza grapes.
