Crafted by Ben Walgate at Tillingham in East Sussex, this English Colfondo reimagines the Italian style through a bold, natural lens. Bottled on the lees and unfiltered, it pours pale gold and hazy, with creamy, floral aromas and a textured palate balanced by fine bubbles and bright aciditya distinctive, characterful alternative to Champagne.
Grown using Regenerative and Biodynamic practices, the grapes are hand-picked late for ripeness, then gently pressed into stainless steel and neutral oak. A touch of sugar at bottling sparks re-fermentation in bottle, creating a naturally sparkling wine thats raw, expressive, and proudly unconventional.
