Two-thirds of the fruit here is sourced from hillside vineyards for freshness and concentration (Les Cloux and Narvaux) while the other third comes from lower-lying vineyards for richness and breadth (Limosin, Crotots and Criots).The blending of parcels brings together the qualities of the four terroirs, resulting in a balanced, elegant, mineral wine with a very fine finish.
Jean-Philippe Fichet is located in Meursault, where he dedicates his craft to bringing out the very best from some village vineyards, no matter whether premier cruor unclassified.He now has a clutch of holdings in some of Meursaults finest lieu-dits such as Tessons and Chevalires. Low yields are achieved in the vineyards through severe pruning, and in the cellar, JP believes in natural yeasts and long levage (18 months minimum) without lees stirring in large barrels for the first 12 months, followed by 6 months in stainless steel tanks so as not to tire the wines and preserve freshness.
