Languedoc sunshine in a glass. Made from 100% Pinot Noir, the grapes spend around 8 to 10 hours on the skins before a very gentle pressing, then the wine is fermented and settled in stainless steel and bottled in early spring following harvest. The result is a delicate powder-pink robe, clear and bright, evoking the freshness and lightness the wine is built around. On the nose, sweet, tangy aromas recall childhood sweets, layered with fresh red fruit like strawberry and raspberry. The palate follows through with real freshness and balance, carried by a soft, light texture.

Domaine Ricardelle de Lautrec sits in the village of Coursan, in the Aude department of the Languedoc, on vineyards that trace their origin back to Roman times and are planted on sandy limestone soil typical of the region. The estate has been family-run for four generations and is now led by Lionel Bouti, who converted the property to organic viticulture. This isn’t classic Pinot Noir country, but the vines are planted in the estate’s coolest sites and tended with real care, producing wines that are aromatic and sappy rather than heavy.

The approach in the cellar favours restraint: natural yeasts, no added sulphites, and bottling unfined and unfiltered, letting the fruit do the talking. Some cuves in the range go further still, carrying Demeter biodynamic certification alongside organic status.
