From vineyards 200-300 meters above sea level, from two different plots: one characterized by calcareous and pebbly soils, the other with a clayey-marly matrix with vineyards of an average age of 50 years.

Sylvain Pataille is a young winemaker, trained in Bordeaux and bringing a fresh approach to Burgundian winemaking. A dedicated advocate of organic and biodynamic practices, he now oversees a range of vineyards scattered across Marsannay. With minimal yields, biodynamic viticulture and a gentle winemaking approach using only indigenous yeasts and minimal sulphur, Sylvain produces extraordinary wines known for their remarkable balance, seamless texture, and a distinct minerality that reflects the essence of Marsannay’s great terroir.

Over the years, Sylvain has become the leading proponent of the re-appraisal of aligot. A grape which has many similarities to chardonnay, both were first grown in Burgundy in the 17th century and are natural crosses of pinot and gouais blanc two of Western Europes most ancient and prolific progenitors.
