This is a blend of all the ‘caillotes’ (limestone pebbles) parcels of the domaine, the vines are 25 years old on average, vinified in stainless steel and aged for at least a year. A really textural style of Sancerre that really showcases some terroir rather than just Sauvignon typicity.
Initially robust with the classic green fruit overtones, it will open up to some grapefruit and eldelflower notes with some air. The palate is medium bodied with hints of citrus and kumquat balanced by a clean dry finish. No oak here, allowing the fruit to shine through.
Domaine Thomas is a small nine hectare family run estate in the heart of the Sancerre appellation. A large proportion of these vineyards lie on the famous Silex soils, renowned for producing those classic gooseberry and gun flint aromatics. Having studied in Burgundy, Julien Thomas came back to the family estate with the importance of terroir in his mind. His vineyards are organic certified, and Julien now practices biodynamic farming to produce his wines.
