Flavour Profile
Aromatic and mineral-driven. Expect citrus peel, dried herbs, volcanic ash, and a whisper of sulphur on the nose. The palate is taut and linear, with razor-sharp acidity, gentle smokiness, and a long, briny finish. This is a wine of pure terroir: salty, structured, and uncompromising.
About the Winery
Bodegas Tamern was founded in 2019 by footballer David Silva on his native island of Gran Canaria. Teaming up with respected Canary winemaker Jonathan Garca (Suertes del Marqus), theyve created a visionary organic wine project focused on small parcels, native grapes, and volcanic expression. Tamern wines are wild-fermented, low-intervention, and intensely expressive of their land.
About Canary Wines
Canary Islands wines are gaining cult status for a reason. Grown on volcanic soils at high altitudes and cooled by Atlantic breezes, they deliver electric acidity, minerality, and an unmistakable salty edge. Indigenous varieties like Malvasa, Vijariego, and Listn thrive here, untouched by phylloxera and rooted in centuries-old traditions.
How to Pair It
With its crisp acidity and saline finish, this wine shines alongside grilled seafood, citrusy ceviche, or a plate of salted almonds. Its also great with seafood paella or aged goat cheese, drawing out both freshness and depth.
